๐ Bananas ๐
If you stay in a place where there is a lot of sunlight, it is easy to grow bananas. In tropical countries bananas are non seasonal and fruit throughout the year. In places where winter has little sunlight, bananas which fail to mature before winter will be remain dormant and continue to mature only when the season change. So may take more than a year for a plant to produce ripe bananas ๐ There are many varieties of bananas. In countries that import bananas, the most common variety sold in stores is Cavendish. Cavendish is widely grown as it is disease resistant. Coming from an equatorial country that has many varieties of bananas, I can tell you that there are many varieties that taste better than Cavendish. Store bought bananas do not taste as nice as home grown bananas. The bananas that you buy are harvested when they are still unripe. The bananas you eat may have been harvested as much as 4 weeks ago. If you plant your own bananas, you can even let them ripen on the tree. I like to harvest my bananas when they are just starting to turn yellow. Such bananas are ready to eat after keeping for about 3 days. Allowing the fruit to remain on the plant for that extra 2 or 3 weeks gives the plant time to put so much food into the fruit and so they are much more delicious. Unripe bananas contain mainly starch. As the banana ripens, the starch turns into sugar. Certain varieties of bananas can be used for cooking when they are still unripe or just starting to ripen. Bananas are a healthy source of fiber, potassium, vitamin B6, vitamin C, and various antioxidants including dopamine and catching. Bananas also contain phytonutrients. Bananas have a relatively low glycemic index (GI) although it has starch and sugar. The starch it has is resistant starch and the fiber it has helps to keep its GI low. ๐ฆ Why add salt to pineapples? ๐
There are 2 reasons for adding salt to pineapple or to soak pieces of pineapple in salt water. 1) To make it taste sweeter 2) To reduce the tingly sensation of our tongue or mouth after eating ๐ Salt does not make pineapple sweeter but it makes pineapple taste sweeter. Huh! What's the difference between being sweet and tasting sweet? What we taste is how our brains process the interplay of various tastes. There are 5 different tastes: The 4 basic flavours of sweet, salty, sour, bitter, and complex flavour umami or tastiness (sometimes referred to as savoury). A food or drink may contain more than 1 flavour and our brain has to process all the flavours to tell us what the taste is. Take lime juice. It is sour. Adding sugar adds sweetness. The more sugar we add, the more sweet it taste and less sour it taste. The sourness of the lime juice is not destroyed. It is still there. It just gets more and more hidden by sweetness. Eventually our brain tells us the lime juice is not sour but sweet. A similar process goes on between bitter and sweet. Black coffee is bitter. As we slowly add sugar it taste less bitter. All the substance that gives coffee a bitter taste is still there but we notice the bitter taste less and less. Now coming back to ๐๐. It is an acidic fruit with a PH of between 3 to 4 (PH of 7 is neutral and PH >7 is alkaline) Adding salt does not destroy the acidity of pineapples. The acidity of pineapples comes not only from citric acid but also from malic acid. Citric acid is sour. Malic acid is also bitter. Salt hides the sourness and bitterness of both citric acid and malic acid. So we taste these 2 flavours less and notice the sweetness of the pineapple more. In this way, salt did not make ๐ more sweet but just make it taste more sweet. mmk, do you like bitter taste? Do you prefer your coffee dark without sugar or milk? Perhaps one of the causes of your dislike of ๐ is the taste of malic acid. Now let's look at how delicious food taste and how umami it is. When cooking we should not just use the exact amount of vinegar or salt to get the degree of sourness or saltiness we want. It will not taste delicious. What we should do is to use more vinegar or salt than is required and then hide the excess flavour by adding a bit of sugar. The final product that has all 3 elements of sweet, sour, and salty hiding one another to produce a complex umami will taste very delicious. Umami has different kind of sweetness than that of sugar. It is like adding Monosodium Glutamate (MSG) to food. It enhances the flavour of food. The sweetness of MSG is umami and not the sweetness of sugar. Instead of adding MSG, we can add umami to food by adding different types of food and also by prolonged cooking to extract flavour. For example if we add meat or bones to a soup/stew and simmer it for many hours, the soup or stew will be full of umami I find adding ๐ to food adds umami or zest. What do you think. Do you agree that we should use more salt or vinegar than necessary and then balance the flavour out by adding sugar? The food may be less healthy, but it will be more delicious. If you have not been doing so, I suggest that you try it and see for yourself whether it will take your cooking to another level. ๐ฆ What pineapple is the most delicious?
In one of mmk's comments to my post about Laksa, he mentioned that he does not like ๐๐. Just to bug mmk, I am making a post about ๐๐. Actually, I am not so naughty but I am making this post because I like ๐๐. Perhaps mmk doesn't like pineapples is because the varieties available in Slovakia are not the better ones. There are many varieties of pineapples available in my country, Malaysia. The main pineapple varieties grown in Malaysia are: 'Moris', 'N36', 'Sarawak', 'Gandul', 'Yankee', 'Josapine', 'Maspine', and most recently 'MD2'. Some of these varieties such as N36 and Josapine were locally developed for the local fresh fruit market. MD2 is a super sweet pineapple. They have different textures, juiciest, aromas, and different degrees of sweetness. Some varieties are not sweet but are sour. Some varieties are hard and fibrous. I like those that that are soft, juicy, sweet and fragrant at the same time. Mmm...so yummy. Pineapples grow best in places where there is plenty of sunlight. Malaysia has weather that is suitable for the cultivation of ๐๐ and is an exporter of pineapples including canned pineapple and pineapple jam. My mother used to make homemade pineapple jam. We eat the jam with bread and also for making tarts. In order to make the pineapple jam, we first grate pineapples. The grated pineapples are squeezed and the juice is boiled together cloves until it is very concentrated. Sugar is the added and the pineapple added. The mixture is boiled futher until it turns a golden brown colour. Once the sugar and pulp has been added, the mixture has to be stirred continuously to prevent it from sticking to the pot and being burned. So boiling just the pineapple juice until it is very concentrated saves a lot of work. Using the concentrated juice gives the jam a rich flavour and nice aroma. Just the cooking process of boiling the juice and cooking the mixture while stirring takes several hours. It is possible to buy ready made pineapple jam. The bought jam does not taste as good as the homemade jam that is the product of the labour of love that was put into making it. Another homemade dish that I remember fondly is salt fish head and pineapple curry. Those who do not like preserved salted fish will say that it stinks. Those who love it like the aroma. Fish head is used instead of the flesh of the body of the fish because the texture of body flesh is not smooth. The curry also contains santan (coconut milk made by squeezing grated old coconuts) Santan adds aroma to the curry. The curry should be made at least 1 day before it is eaten. This is to give time for the pineapple slices to absorb the flavour of the curry including that of the salted fish, spices, and santan. Mmm ... What variety of pineapple do you like? Do you grow your own pineapples? I have a few pineapple plants of different varieties including MD2. The type of soil affects the taste of the ๐๐. MD2 grow best in mineral soil. Those grown in peat soil are not as sweet as those grown in mineral soil.๐ฆ

๐ฆ Sweet Potato Donut and Laksa.
The video below is not taken by me but by IChang and her husband, Jimmy. They are Vloggers who have a YouTube channel called IChang. They have travelled to many countries and their focus is on the food of the places they visit. They have spent many months in Malaysia and know a lot about the different types of food of the many races in Malaysia. In the video below, they went to Malacca for the 2 delicacies. The donuts were made from mashed sweet potatoes that have been boiled. Care must be taken not to overboil the sweet potatoes as that would cause a loss of flavour. IChang and Jimmy were given a sweet potato that was perfectly boiled to let them taste how delicious it was. The mashed sweet potatoes were made into donuts. A lot of vendors just make balls instead of donuts which take more effort to shape. Donuts have a larger surface area. This makes the final product more delicious because the outer surface is crispy and is coated with fragrant gula melaka. Gula means sugar and melaka is Malacca in BM (national language of Malaysia). However "gula melaka" is not sugar from Malacca. It is made all over Malaysia and is brown coloured palm sugar. Unlike normal sugar that is just sweer, gula melaka has a fragrance. Most of the vendors who sell fried sweet potatoes balls do not coat the balls with gula melaka. IChang and Jimmy were given a fried donut without the coating so that they can see the difference the coating makes. Now let us talk about the Laksa. The noodles in it are made of rice flour. Shredded cucumber, onions, and pineapple are added. Finely shredded Bunga Kantan (Kantan flower which is reddish pink in colour) is also added for fragrance. The soup of the laksa is made by boiling fish with lemon grass and assam java. Assam java is sour and is available as a thick paste together with seeds or as seedless dried slices. Either form may be used. The paste form will result in a thicker soup. Pounded shallots may also be used in the soup. The laksa comes with lime that the customer can squeeze if he wants to have the soup more sour. If you can take the sour taste you should add the lime juice as it adds flavour to the soup. The cost of 5 (excluding those eaten while watching the the preparation of the donuts) sweet potato donuts, 2 cups of tea (kurang manis means put less sugar so that it is not so sweet) and 2 bowls of laksa is RM19 which is about USD4.30. When IChang wanted to pay RM20, a "battle" ensued as the lady boss of the shop insisted on returning the RM1 as change. Do you think that this is funny? Other customers said that IChang lost the battle. ๐ Should the owner have accepted the tip? The boiled sweet potato and the donut without gula melaka should be worth more than RM1. Do you think that the price of RM19 is cheap. Do you want to try to make the fried mashed potatoes? Will you just make balls or will you shape the mashed sweet potatoes into donuts? If you cannot get hold of gula melaka, you can try making caramel with ordinary sugar. Although it will taste different from gula melaka it will still give your donuts a shiny appearance. Do you think the looks of food (such as a shiny coat in this case) is important? Ha ha. I think I have made you want to eat the above. ๐ฆ

๐ฆ Is photography an art or a science?
There are no photos in this post but hopefully we can have a lot of engagement on the above question. Advancement of technology has made it easier to take photos. Modern cameras including those in handphones has sensors and chips that process information from the sensors and can automatically select suitable settings. However a good photographer can choose not to use automatic mode and use his own settings. By choosing different apperture size and shutter speed a lot of special effects can be achieved. For example using a larger apperture size and compensating by increasing shutter speed will reduce the depth of field. The larger the apperture the shallower the depth of field. Deciding on the depth of field or what is sharp and what is blur in a photo is an art. On the other hand what combination of apperture and shutter speed so that the photo is not overexposed or underexposed is a science. Modern cameras with their processors has reduced the science element. For example by choosing Apperture priority mode the photographer chooses the apperture that will give the depth of field he wants and the camera will automatically decide on the shutter speed that will produce a perfectly exposed photo. It can be argued that knowing what apperture size to choose is a science. However TTL or through the lens monitoring where the what will come out in the photo can be seen (preview of the photo) on the inbuilt screen of the camera allow the photographer to adjust settings untill he is satisfied. So the final photo is a mixture of the art of the photographer and the science of the camera. Sometimes an artistic photographer may want to have an underexposed or overexposed picture for special effects. By using a very high shutter speed such as 1/2000 it is possible to freeze a fast moving object such a racing motorbike. However such a photo does not give a sense of speed. A much better picture can be produced by choosing a slower shutter speed and panning or moving the camera to follow the motion of the motorbike. The motorbike will be sharp while the background will be blur and so convey the sense of speed Most ardent photographers will have more than one lens for his camera. The lenses can be of different focal lengths or he can compromise by having a zoom lens where he can zoom between different focal lengths. He can also have special lenses such as a macro lens for close up photography eg of flowers. Adding filters such as a UV filter can also change how a photo will look. Is the choice of what to do, apperture size, shutter speed, lens to use including what focal length science or art? Please comment and give your opinions. Perhaps technology is increasingly taking care of the scientific aspect. The artistic aspect of photography will remain crucial. How to compose a picture, what angle to take it from, direction and amount of lighting etc. Factors like these will make the difference between an ordinary photo and one that is the work of a master. Just like the difference between the paintings of artists like Leonardo Da Vinci, Picasso, Rembrandt and those who paint for fun as a hobby ๐ฆam not a photographer and do not own any cameras other than the basic camera on an entry level hand phone. That camera has very low specs. ๐ฆ do not have practical experience taking photos. However as a bookworm who like to read, some of the things ๐ฆ have read are articles on photography. Bittergourd omelette
The onion oil mentioned in the video is made by frying onions slices in oil until the onion is brown and slightly crispy. You can prepare this in bulk and store untill you need to use it. It keeps well in the refrigerator if you prepare a lot of it. Using onion oil instead of plain oil adds fragrance to food. For those who try Asian cooking at home, this may be reason why what you cook lack a little oomph compared with what you eat in restaurants. Restaurants will prepare onion oil in bulk and use a little of it in their cooking. The fried onion that was sprinkled is from the preparation of onion oil. It serves as a garnishing as well as adds a slightly sweet and fragrant taste. If you like the bitter gourd soft instead of crunchy, you can stir fry it before adding the other ingredients. In order to save time, what restaurants do is blanche the bittergourd instead of washing it with salt and squeezing to reduce bitterness. The length of time it is kept in the boiling water depends on how soft/crunchy you want the bittergourd to be.

The person ๐ฆ love the most
We should not judge a book by it's cover. When it comes to girls, I tend to judge them by their cover or rather their faces before I get to know them. Due to all the rejection that I have experienced from childhood, I do not expect any girl to want me as a partner. In order to avoid the pain of being rejected by a girl, I would rather not try to ask for their friendship but just admire them from a distance. I like girls with sweet faces and have sweet smiles. I take this as an indication of their personality that they are friendly and will not pour scorn on me should I approach them. Judging them intuitively by their faces and smiles without getting to actually know them is like judging a book by its cover. It is not fair to them. But then it makes no difference. I just think that I will like them and dream of a relationship with them without taking any action to start a relationship. The insecurity I feel is too much for me to risk being rejected. They are not ๐ซ๐ฌ I โค๏ธ but are just ๐ซ๐ฌ I think I can โค๏ธ The girls with sweet faces and smiles were like the pretty rainbows ๐mentioned in the song "Give them all". Like the pretty ๐in the song, they will not be there even if I try to chase them. Like the song says, I am spinning round and round in hopeless dreams of romance โค๏ธ. Dreams will never come to pass if I do not even dare to try be be friends. So I wrapped up those dreams and gave them all to Jesus and expected to remain single all my life. Then Jesus brought a girl into my life but I treated her as a sister rather than as a girl I โค๏ธ. A girl working in a company that I was auditing wanted to go to church. She started going to the church that I attended. After church we would go have lunch and talk about things related to God. She became a Christian and so became my sister in Christ. Talking with her about God and answering her questions was not difficult. I was comfortable talking with her and the things we talked about diversified. I became so comfortable talking with her that I started confiding in her and telling her about myself, my hopes and dreams. This went on for years and I treated her as a sister I like and who is nice to be with. I do not know how she felt about me. I just know that I enjoy her friendship and that she was the only girl I treated as a real friend and not just an acquaintance. They say โค๏ธ is blind. I was "blind" and did not see that I โค๏ธ her as someone that I would โค๏ธ to marry. God is good. He removed my blindness and made me realise that there is a girl that I โค๏ธ and not just think that I can โค๏ธ. The miracle is that she โค๏ธ me too! So ๐ฉโโ๏ธK and me married. ๐ฉโโ๏ธ K is THE PERSON that I โค๏ธ the most.

๐ฆ why the song "If' is relevant to writing
๐ฆ is a writer. A tip that is often given writers is : Don't tell; ShowIf the words of a writer tells a story, the reader "hears" the story. If the writer can use words to paint pictures in the mind of readers, the writer can show the readers what is going on in the story. If the pictures painted are in the form of a senseround movie (do you remember certain movies that have to be watched in cinemas with speakers that are so loud at certain parts of the movie that you can feel vibrations) the reader can hear, see and feel sounds, colours, images and feel the emotions of the characters of the story. The picture painted by the writer is worth more than a thousand words that merely tell a story.

Looking at ๐ฌ๐ซ, songs, scripture, the ๐ etc can give ๐ฆ ideas to write on. The problem for ๐ฆis that ๐ฆ has disabilities that make ๐ฆ very slow.
